1/3 cup packed brown sugar 1/3 cup plant-sterol margarine 1 omega-3 egg 1 1/3 cups mashed ripe bananas ½ tsp. vanilla 1 cup all-purpose flour ½ cup whole wheat flour 1/3 cup ground flax seed 1 tsp. baking soda 1 tsp. baking powder Frosting: 1½ cups powdered sugar 3 Tbsp. butter, melted 1½ Tbsp. orange juice ¼ tsp. almond extract
Prepare a 9x13-inch baking pan by coating with no-stick cooking spray. Preheat oven to 350°. Using an electric mixer, cream sugar and margarine. Add egg and mix well. Add bananas and vanilla and mix until blended. In a small bowl, combine flours, flaxseed, baking soda and baking powder and gradually add to banana mixture; mix just until blended. Spread batter evenly in the prepared pan and bake for 20 minutes or until golden brown and toothpick inserted in center comes out clean. For frosting: combine all ingredients, mix well and spread over cooled bars. Makes 20 bars.

Plant-sterol margarines are margarines that contain an added ingredient, plant-sterol esters, which help to lower total cholesterol and LDL-cholesterol. Benecol or Take Control brands of plant-sterol margarines are both trans-fat free and are available in two versions; regular fat (8gm fat per tablespoon) and low-fat (5gm fat per tablespoon). You can cook, bake and sauté with the regular fat version. It is a good alternative to butter, regular margarines or shortenings when baking. The low-fat version should be used as a spread for toast, baked potatoes or vegetables.
