Mandarin Orange Shrimp Stir Fry
Ingredients
4 large shrimp 1 cup mixed vegetables, such as carrots, bell peppers, onions, and broccoli 2 ounces Mandarin Orange Stir Fry Sauce 3/4 cup cooked brown rice 1/3 cup 1% cottage cheese 1 pineapple ring, grilled
Makes 1 Serving
Directions
1. Coat a nonstick pan with cooking spray and heat to medium high. 2. Add shrimp to pan. Sautee until translucent and set to the side. 3. Add vegetables to the pan. Heat over medium-high heat until colors are bright and vegetables are tender. Add shrimp back to pan, and then add the Mandarin Orange Stir Fry Sauce. Turn to coat all shrimp and vegetables in sauce. 4. To plate this meal, start with ¾ cup brown rice on a plate. Place shrimp and vegetable mixture on top. Serve alongside cottage cheese and a grilled pineapple ring.
