Garlic and Roasted Red Pepper Hummus
Yield: 8 servings
2 15-ounce cans low-sodium garbanzo beans (chickpeas), drained and rinsed
½ cup lemon juice
2 teaspoons garlic minced from jar
1.5 tablespoons Mezzetta Roasted Red Peppers (drained and rinsed)
1 tablespoon extra-virgin olive oil
¼ teaspoon paprika
½ teaspoon dried parsley
1. Place all ingredients in a blender or food processor and blend until smooth.
2. Serve with veggie slices or sticks as a dip.
