Southwestern Salad

Southwestern Salad


Yield: 4 servings


1/2 cup diced fresh mango
1 cup canned black beans, rinsed and drained
1/2 cup diced red bell pepper
1/2 cup cooked lentils
1 cup minced, seeded jalapeño pepper
1/4 cup minced red onion
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
2 tablespoons orange juice
1/2 teaspoon sea salt
2 tablespoons extra-virgin olive oil
1 cup corn (cooked)
2 tablespoons minced garlic


1.Combine all the ingredients and mix well in serving bowl.
2.Chill for 20 minutes and then bring to room temperature for 10 minutes before serving.
