Autumn Pear Salad with Candied Pecans & Feta
16 ounces spinach or other fresh greens
4 ounces crumbled feta cheese
3 tablespoons white sugar
½ cup pecans
1/3 cup olive oil
3 tablespoons red wine vinegar
1 ½ teaspoons white sugar
1 ½ teaspoons prepared mustard
1 clove garlic, chopped
½ teaspoon salt
Fresh ground black pepper to taste
8 slices whole grain bread, toasted
- Heat a skillet to medium heat and stir 3 tablespoons sugar with the pecans. Continue stirring
until the sugar has melted and caramelized the pecans. Transfer pecans to waxed paper or foil.
Allow to cool and break into small pieces.
- For dressing, blend oil, vinegar, 1 ½ teaspoons sugar, mustard, chopped garlic, salt, and pepper.
- In a large serving bowl, layer spinach or greens, pears, and feta cheese. Pour dressing over the
salad, sprinkle with pecans, and serve with toasted whole grain bread.
