Kale Bacon and Onions

Kale with Bacon and Onions


½ pound kale
½ medium yellow onion, chopped onion
2 slices center-cut bacon, coarsely
chopped (or two teaspoons olive oil)
¼ - ½ cup water


Wash kale, remove stems, and coarsely chop.

Sauté onion and bacon (or olive oil if not using bacon) in a large pan over medium-low heat. Cook, stirring occasionally, until bacon is crisp and onions are soft, about 10 minutes.

Remove bacon and onions from pan, set aside.

Add kale to a hot pan, pour in water, and cover. Steam kale until desired tenderness is reached (6-8 minutes), stirring occasionally.

Stir in bacon and onions, heat through and serve.
