1 pound fresh salmon
2 teaspoons olive oil
½ teaspoon dried thyme
1/4 cup grated Parmesan cheese
1 cup pitted Kalamata olives (no salt added)
1. Preheat the oven to 425°F. Place the fish in a flat baking dish, skin side down.
2. Rub both sides with olive oil. Sprinkle the top with the thyme and cheese.
3. Bake for 10 minutes, or until the fish flakes easily with a fork. Top with olives. Serve immediately.
